If you are trying to add a little green to your dinner table and you want to impress your family and friends with flavor, I highly suggest this simple Arugula Salad.
Lee and I were introduced to it while having dinner with Bobby and Lisa Maximus at their home in Salt Lake City. Bobby grilled up some amazing steaks from Meat Locker and Lisa whipped up this salad. It was a delicious and healthy dinner.
To my surprise, Lee bought the salad ingredients when we came home and prepared it for one of our dinners. Lee eating salads…. It's just not a regular occurrence, so you know it's good. This positively proves that you don’t have to buy a lot of crazy ingredients or take a long time to prepare healthy and delicious foods.
Simple Arugula Salad
Serves 4-6
2 tablespoons olive oil
2 tablespoons freshly squeezed lemon juice
1/8 teaspoon kosher salt
Freshly ground black pepper
5 ounces arugula (about 5 packed cups)
2 ounces shaved Parmesan cheese (about 2/3 cup)
Whisk the olive oil, lemon juice, salt, and a few grinds of black pepper together in a large bowl. Add the arugula and toss to combine. Top with the shaved Parmesan and serve immediately.

Make ahead: The dressing can be made up to 5 days ahead of time and stored in an airtight container in the refrigerator. Whisk again before using.
