Recipe: Sunny Summer Omelet

Summer temperatures are beginning to arrive, which means some new fruits and veggies are coming into season. Breakfast is an important part of your day, and omelets are a great go to option. A lot of us don’t have the time to create a gourmet meal every morning, especially with kids, school, or work. Omelets are versatile and super simple (and quick!) to make. Check out the sunny summertime omelet recipe below:

Ingredients:

2 eggs

Halved yellow tomatoes

4-5 stalks of asparagus, chopped

Goat cheese crumbles

Salt and pepper, to taste

Directions:

  1. Crack your eggs into a cup or bowl, and scramble them with a fork.
  2. Add ghee, olive oil, or butter to a skillet and melt. Pour eggs into a hot skillet and let sit as the eggs cook through.
  3. Add tomatoes, chopped asparagus, and goat cheese (or cheese of choice) and heat/melt.
  4. Remove your omelet from the pan. Fold omelet and enjoy!

In just a few minutes, you have a high protein, veggie packed breakfast that will keep you full until your next meal. The best part about omelets is you can change up your fillings so you are always having something new! Happy Cooking!
