Blueberry Blender Pancakes

This holiday season, you’ll probably find yourself hosting an overnight houseguest or two. While I like to spend time in the kitchen with family cooking dinner together, breakfast is something I want to do on my own. I like to start my morning enjoying a cup of coffee in silence, which means I don’t want a busy kitchen.

I found this recipe for Blueberry Blender Pancakes on Pinterest, and whipped it up this weekend for houseguests. I love this cute blogger: she uses fresh, healthy ingredients to make great recipes that never disappoint.

These pancakes were perfect. Easy to assemble, cooked quickly, and were on the table before anyone could pop their head in the kitchen and offer to help.

In your blender, combine old fashioned rolled oats, milk, blueberries, baking soda, baking powder, eggs, Greek yogurt, a banana and some lemon zest. Blend and pour. It’s that easy.

Pour batter into a preheated greased iron skillet. Cook until the batter begins to bubble, about 2 minutes, then flip. Cook another 1-2 minutes. Top with a pat of butter and serve.

I try to steer clear of syrup in my house because it’s such a mess (how do my kids manage to get it in their HAIR?), but I did let them sprinkle powdered sugar on top, and they loved them. Not only are they delicious, but these pancakes are low in sugar, and heart healthy.
